  • Bursting with Flavor: The secret isn’t just in the crunch; it’s also in the flavor. A zesty, savory marinade tenderizes the chicken and infuses it with delicious spices, ensuring every bite is juicy and packed with taste.
  • Effortless Cleanup: Baking on a parchment-lined sheet means minimal cleanup, leaving you more time to enjoy your delicious meal and less time scrubbing dishes.

They’re also fantastic for meal prep, easily reheated for lunches or quick snacks.

Essential Ingredients & Clever Substitutions

Gather your ingredients: Fresh chicken, panko breadcrumbs, and a vibrant blend of spices are key.
  • Kosher Salt: In my recipes, I exclusively use Morton kosher salt due to its superior flavor and crystalline structure, which is ideal for everyday cooking. If you’re using finer table salt, remember to reduce the quantity by about half to prevent over-salting. I highly recommend investing in some kosher salt for your pantry!
  • Granulated Garlic & Onion Powder: These pantry powerhouses are crucial for building a foundational layer of savory, aromatic flavor. They provide a deeper taste than fresh garlic or onion in this application without adding moisture. If only garlic powder or onion powder is available, they can be used interchangeably with their granulated counterparts.
  • Smoked Paprika: A vital ingredient that imparts a beautiful touch of smoky depth and a subtle reddish hue to the coating, enhancing both flavor and visual appeal. While regular or sweet paprika can be substituted, they will yield a milder flavor profile. For an extra kick, a pinch of hot smoked paprika works wonders.
  • Chicken Tenders: Pre-trimmed chicken tenders are fantastic for this recipe as they offer uniform size, ensuring even cooking. Alternatively, you can easily slice boneless, skinless chicken breasts or thighs into 1-inch thick strips. Using chicken thighs will result in a slightly richer, juicier tender.
  • Mayonnaise: Don’t underestimate the mayo! It’s the secret ingredient that acts as a tenderizer, binding agent for the breading, and helps retain moisture. Its subtle richness contributes to the overall flavor. A good substitution is Greek yogurt or sour cream (about 1/4 cup), but be aware that this might slightly alter the final flavor and texture.
  • Egg: The egg is essential for creating a sticky base, allowing the marinade and ultimately the crispy breading to adhere perfectly to the chicken. It helps create that lovely, golden crust.
  • Vinegar: A splash of vinegar brightens the marinade and cuts through the richness of the other ingredients. White wine vinegar, apple cider vinegar, or even fresh lemon juice can be used interchangeably, each adding its unique subtle tang.
  • Dijon Mustard: This condiment brings a distinctive sharp, tangy, and slightly pungent depth to the marinade, complementing the chicken beautifully. If you don’t have Dijon, spicy brown mustard or whole-grain mustard can also be used for a similar flavor profile.
  • Cornstarch: A crucial ingredient for crispiness! Cornstarch helps to thicken the marinade, creating a light, almost invisible coating on the chicken that the panko adheres to perfectly. It also contributes to the extra crunch. If cornstarch is unavailable, 2 tablespoons of all-purpose flour can be used as a substitute.
  • Olive Oil: Used to toast the panko breadcrumbs, olive oil imparts a delicate flavor and helps achieve that irresistible deep golden color and crunch. Any neutral-flavored oil, such as avocado oil, vegetable oil, or canola oil, can be used instead.
  • Panko Breadcrumbs: These Japanese-style breadcrumbs are non-negotiable for achieving that ultimate light, airy, and incredibly crispy crust. Their unique flaky texture sets them apart from regular breadcrumbs, which would result in a denser, less crunchy coating.
  • Parmesan Cheese: Finely grated Parmesan adds a wonderful salty, nutty, umami kick to the breadcrumb mixture, elevating the flavor profile. Ensure it’s finely grated so it blends seamlessly with the panko. Grana Padano or Pecorino Romano are excellent alternatives, each offering a slightly different, delicious nuance.

Expert Tip from Bri

Maximize your efficiency in the kitchen! While your chicken tenders are marinating, utilize that time to toast the panko breadcrumbs. This clever multitasking ensures everything is perfectly prepped and ready for assembly, streamlining your cooking process.

  1. Prepare the Seasoning & Marinate the Chicken: In a small bowl, thoroughly combine your kosher salt, granulated garlic, onion powder, and smoked paprika. This is your flavorful seasoning mix. Set it aside for later. In a separate large bowl, combine the chicken tenders, mayonnaise, egg, vinegar, Dijon mustard, and cornstarch. Add 1 teaspoon of your prepared seasoning mix to this wet mixture. Stir everything well until the chicken is evenly coated. Allow the chicken to marinate at room temperature for at least 15 minutes to absorb flavors and tenderize. Meanwhile, preheat your oven to a robust 425°F (220°C).
  2. Toast the Panko Breadcrumbs: Place a dry skillet over medium heat on your stovetop. Add the olive oil and then the panko breadcrumbs to the warm skillet. Sauté the panko for 6-8 minutes, stirring frequently and consistently, until they turn a beautiful, deep golden brown. This crucial step is what gives your tenders their extra-crispy texture and nutty flavor. Once toasted, immediately transfer the panko to a clean plate or a shallow bowl and spread it out to cool completely. Cooling prevents clumping when mixed with other ingredients.
  3. Create the Crispy Breadcrumb Coating: Once the toasted panko has cooled down to room temperature, transfer it to a shallow dish or a wide plate. Add the finely grated Parmesan cheese and the remaining seasoning mix from step 1. Mix thoroughly with a fork or your fingers until all ingredients are well combined and the Parmesan is evenly distributed throughout the panko. This shallow dish will make the breading process much easier.
  4. Prepare Baking Sheet & Bread the Chicken: Line a large baking sheet with aluminum foil or parchment paper for easy cleanup. Generously spray the foil/paper with cooking oil or a non-stick spray – this prevents sticking and aids in crisping. One by one, remove each chicken tender from the marinade, allowing any excess marinade to drip back into the bowl. Place the marinated tender into the panko mixture, pressing gently to ensure a thick, even coating on all sides. A pro tip: use one hand for handling the wet chicken and the other for handling the dry panko mixture. This keeps your hands cleaner and prevents a clumpy mess. Arrange the breaded tenders in a single layer on the prepared baking sheet, ensuring they are not touching each other, which is key for even crisping.
  5. Bake to Golden Perfection: Before baking, lightly spray the tops of the breaded chicken tenders with a little more oil. This extra spritz helps achieve that beautiful golden-brown color and irresistible crunch in the oven. Place the baking sheet on the upper rack of your preheated oven. Bake for 10-15 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C) using a meat thermometer, and the coating is deeply golden and crispy. Cooking times may vary depending on the thickness of your tenders, so always rely on the internal temperature for doneness.

Delicious Serving Suggestions

Crispy chicken tenders are a fantastic, versatile dish that makes an ideal family meal. They’re hearty, comforting, and adaptable to many different side dishes. Here are some of my favorite family-friendly recipes that perfectly complement these delectable tenders:

  • Dutch Oven Mac and Cheese: Indulge in a rich, creamy, and gloriously ooey-gooey mac and cheese. This recipe offers a hint of heat that beautifully contrasts with the savory chicken, creating a truly satisfying meal.
  • Yukon Gold Mashed Potatoes: Fluffy, buttery, and incredibly smooth, these Yukon Gold mashed potatoes are one of my absolute favorite ways to enjoy potatoes. They provide a comforting, classic accompaniment that everyone will love.
  • Brown Sugar Honey Glazed Carrots: Add a touch of sweetness and vibrant color to your plate with these glazed carrots. They’re quick to make and become incredibly tender with a beautiful sheen, making them a fantastic favorite side dish.
  • Crispy French Fries or Sweet Potato Fries: For a classic “tenders and fries” combo, a batch of crispy homemade or frozen fries makes an easy and satisfying side.
  • Fresh Green Salad: A light, refreshing green salad with a simple vinaigrette can cut through the richness of the chicken and add a healthy balance to your meal.
  • Steamed Green Beans with Lemon: A quick and easy vegetable option that adds a touch of freshness and a bright, zesty flavor.
  • Coleslaw: A creamy or vinegar-based coleslaw offers a cool, crunchy texture that provides a great contrast to the warm, crispy chicken.

Expert Tips for Perfectly Crispy Tenders

Achieving restaurant-quality crispy chicken tenders at home is easier than you think with these expert tips:

  • Don’t Skip Toasting the Panko: This is arguably the most critical step for maximum crispiness. Raw panko won’t achieve the same golden-brown, airy crunch in the oven. Toasting develops flavor and ensures a truly crispy crust.
  • Marinate for Maximum Flavor & Tenderness: Even a short 15-minute marinade makes a huge difference. The mayonnaise and vinegar work together to tenderize the chicken while infusing it with the delicious spice blend, resulting in incredibly juicy tenders.
  • Employ the “Wet Hand, Dry Hand” Method: To prevent a gloppy, clumpy mess and ensure an even coating, designate one hand for handling the wet, marinated chicken and the other for pressing the dry panko mixture onto the tenders. This keeps your breading station clean and efficient.
  • Lightly Spray Before Baking: A quick spritz of olive oil or cooking spray over the tops of the breaded tenders before they go into the oven is essential. This helps the panko to brown beautifully and develop that irresistible golden, crispy texture.
  • Avoid Overcrowding the Baking Sheet: Give your tenders plenty of space! Arrange them in a single layer with a little room between each piece. Overcrowding traps steam, leading to soggy tenders instead of crispy ones. If necessary, use two baking sheets.
  • Use a Cooling Rack: For extra crispiness, especially if you find the bottoms aren’t as crispy as the tops, bake the tenders on an oven-safe wire rack placed over a foil-lined baking sheet. This allows air to circulate around all sides.

Avoid These Common Mistakes for Best Results

Even simple recipes can have pitfalls. Steer clear of these common errors to ensure your crispy chicken tenders turn out perfectly every time:

  • Skipping the Panko Toast: As mentioned, this is a make-or-break step. Untoasted panko will simply not achieve the desired golden color or light, crunchy texture in the oven. It’s worth the extra few minutes!
  • Not Letting the Breadcrumbs Cool: Mixing hot toasted panko with Parmesan cheese will cause the cheese to melt and clump, leading to an uneven coating. Always allow the panko to cool completely before combining it with other ingredients.
  • Overcrowding the Pan: This is a frequent mistake that leads to steamed chicken instead of crispy chicken. When the tenders are too close together, moisture can’t escape, resulting in a soft, rather than crunchy, exterior.
  • Not Checking Internal Temperature: While a golden crust is a good indicator, always use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (74°C). This guarantees juicy, safe-to-eat chicken and prevents overcooking, which can dry out your tenders.
  • Under-seasoning: Don’t be shy with the seasoning! A well-seasoned marinade and breading are key to flavorful tenders. Taste your spice blend before adding it to ensure it’s balanced.

Exciting Additions & Variations

These crispy chicken tenders are delicious as is, but they’re also incredibly adaptable. Feel free to get creative and customize them to your taste:

  • Turn Up the Heat with a Spicy Kick: For those who love a bit of spice, simply add 1/4 to 1/2 teaspoon of cayenne pepper or a dash of your favorite hot sauce (like Sriracha or Frank’s RedHot) to the seasoning mix or directly into the marinade.
  • Infuse with Herbaceous Flavor: Elevate the aroma and taste by mixing dried Italian herbs, a pinch of dried oregano, or finely chopped fresh parsley into your panko breadcrumb mixture. Rosemary and thyme can also add a delightful, earthy note.
  • Go for a Cheesy Boost: Increase the amount of finely grated Parmesan in the panko coating for an even cheesier crust, or experiment with other hard cheeses like Pecorino Romano for a bolder flavor.
  • Lemon-Herb Zest: Add fresh lemon zest to the panko mixture and a squeeze of lemon juice to the marinade for a bright, refreshing flavor profile.
  • Air Fryer Option: These tenders crisp up beautifully in an air fryer for an even quicker cooking time. Cook in batches at 400°F (200°C) for approximately 10-12 minutes, flipping halfway through, until golden and cooked to 165°F (74°C).
  • Sweet and Savory Twist: For a hint of sweetness, add a teaspoon of brown sugar or a drizzle of honey to the marinade, complementing the savory spices.

  • 1/2 cup finely grated Parmesan cheese

Instructions

  1. Make the Seasoning Mix & Marinate Chicken: In a small bowl, combine 1 teaspoon EACH of Morton kosher salt, granulated garlic, and onion powder, along with 1/2 teaspoon smoked paprika. Set aside. In a large bowl, whisk together the chicken tenders, mayonnaise, egg, vinegar, Dijon mustard, cornstarch, and 1 teaspoon of the prepared seasoning mix. Ensure chicken is well coated. Let marinate for at least 15 minutes. Meanwhile, preheat your oven to 425°F (220°C).
1 tsp EACH Morton kosher salt, granulated garlic, & onion powder,
    1/2 tsp smoked paprika,
    1 1/2 lb chicken tenders,
    1/4 cup mayonnaise,
    1 large egg,
1 Tbsp EACH vinegar, Dijon mustard, & cornstarch
  2. Toast the Panko Breadcrumbs: In a skillet set over medium heat, add 2 Tablespoons of olive oil and the 1 3/4 cup panko breadcrumbs. Sauté, stirring frequently, for 6-8 minutes until the panko turns a beautiful, even golden brown. Transfer the toasted panko to a plate or shallow bowl and allow it to cool completely before the next step.
    2 Tbsp olive oil,
    1 3/4 cup panko breadcrumbs
  3. Prepare the Breadcrumb Coating: Once the toasted panko has completely cooled, mix it in a shallow dish with the 1/2 cup finely grated Parmesan and the remaining seasoning mix. Stir until well combined.

Working one at a time, remove each chicken tender from the marinade, letting any excess drip off. Coat each tender thoroughly in the panko mixture, pressing gently to ensure the breadcrumbs adhere firmly to all sides. Arrange the breaded tenders in a single layer on the prepared baking sheet, ensuring there is space between each one for optimal crisping.
  5. Bake to Crispy Perfection: Lightly spray the tops of the breaded tenders with oil. Bake on the upper rack of your preheated oven for 10-15 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F / 74°C) and the panko coating is deeply golden and deliciously crispy. Serve immediately with your favorite dipping sauces.

Notes

  • Kosher Salt: All of my recipes are tested with Morton kosher salt unless noted otherwise. It is the best salt for everyday cooking because of its size and flavor. If using table salt, the amount should be reduced. I highly recommend picking up some kosher next time you are at the store!
  • Toast the Panko: Don’t skip this step! It’s the key to golden, crunchy tenders.
  • Marinate For Flavor: Even just 15 minutes helps tenderize and season the chicken, ensuring a juicy result.
  • Use Separate Hands: For a clean and efficient breading process, use one hand for the wet marinade and the other for the dry breading. This minimizes mess and ensures a better coating.
