About Zucchini and Yellow Squash: The Stars of Your Summer Table

Zucchini and yellow squash, often mistaken for vegetables, are technically fruits from the gourd family, harvested during their immature stage for optimal tenderness and flavor. They are summer workhorses in the kitchen, prized for their mild, slightly sweet taste and versatility. Both are incredibly low in calories and carbohydrates, yet packed with essential nutrients like Vitamin C, Vitamin A, potassium, and dietary fiber. Their high water content makes them incredibly hydrating and refreshing, especially during hot summer days.

When it comes to grilling, these squashes are ideal. Their firm texture holds up well to the heat, preventing them from becoming mushy, while their subtle flavor acts as a perfect canvas for marinades and seasonings. Grilling also brings out a delightful sweetness and a characteristic char that adds depth and complexity, transforming them into an irresistible side dish that’s both healthy and utterly delicious.

Essential Ingredients & Thoughtful Substitutions

Crafting the perfect grilled zucchini and yellow squash starts with selecting the right ingredients and understanding how each component contributes to the overall flavor profile:

All the fresh ingredients you’ll need to create this vibrant grilled dish.
  • Zucchini & Yellow Squash: When choosing your squash, lean towards larger, firmer specimens. They have a greater surface area for grilling and tend to hold their shape better, reducing the risk of them becoming overly soft or falling through the grill grates. Avoid slicing them too thinly, as this also makes them prone to breaking apart during cooking. Aim for a consistent 1/2-inch thickness for even cooking.
  • Basil Pesto: The heart of the marinade, basil pesto brings a fresh, herbaceous, and garlicky kick. While a homemade pesto made with vibrant fresh basil, pine nuts, Parmesan, garlic, and olive oil offers unparalleled flavor, a high-quality store-bought option can certainly be a convenient and delicious alternative. When purchasing, always check the ingredient list; prioritize brands where fresh basil and extra virgin olive oil are listed prominently at the beginning for the best possible taste and texture.
  • Olive Oil: Extra virgin olive oil is highly recommended here, not just as a cooking medium, but as a crucial flavor enhancer. Its fruity and peppery notes beautifully complement the vegetables and pesto. If you’re out of EVOO, avocado oil or a neutral vegetable oil can serve as substitutes, though they won’t add the same depth of flavor.
  • Lemon: Fresh lemon juice and zest are non-negotiable! The bright acidity of the lemon cuts through the richness of the pesto and feta, adding a refreshing tang that truly elevates the dish. Always zest the lemon before you juice it; it’s much easier to handle a whole lemon for zesting.
  • Kosher Salt: Our recipes are meticulously tested with Morton kosher salt, which is favored for its coarse texture and clean, pure flavor. If you typically use fine table salt, remember to reduce the amount by about half, as it’s much denser and saltier by volume. Having kosher salt in your pantry is a fantastic investment for everyday cooking, as its larger crystals are easier to pinch and distribute evenly.
  • Granulated Garlic: For a more potent and consistent garlic flavor that disperses evenly, granulated garlic is preferred over garlic powder, which can sometimes clump. If you have fresh garlic on hand, feel free to finely mince a few cloves (about 2-3 small cloves) for an even more vibrant garlic aroma and taste.
  • Pistachios: These add a wonderful nutty crunch and a subtle sweetness that balances the savory elements. For maximum convenience and flavor, opt for pistachios that are already shelled, roasted, and salted. If using raw pistachios, a quick toast in a dry pan or oven before chopping will bring out their best flavor.
  • Feta Cheese: For superior creaminess and a truly authentic briny flavor, always choose a block of feta cheese, preferably packed in brine, over pre-crumbled varieties. Block feta has a richer taste and a more pleasant texture. Simply use a fork to crumble it into a small bowl just before adding it to your grilled vegetables.
  • Freshly Cracked Black Pepper: A final flourish of black pepper adds a subtle warmth and aromatic finish, enhancing all the other flavors without overpowering them.

How to Make Perfectly Grilled Zucchini and Yellow Squash on a Gas Grill

Achieving perfectly grilled zucchini and yellow squash is simpler than you might think. Follow these straightforward steps for a delicious and tender result every time:

Quick Overview: A Simple Path to Grilling Success

  • Slice: Prepare your vegetables with uniform cuts.
  • Marinate: Infuse the squash with vibrant flavors.
  • Grill: Cook to tender, smoky perfection.

Step-by-Step Instructions for Flawless Grilling

Visual guide through the easy steps for grilling your summer squash.

Pro Tip: Preheat your grill only after you’ve seasoned your vegetables. This crucial waiting period allows the zucchini and squash ample time to absorb all the delicious flavors from the marinade, resulting in a much more flavorful dish.

Step 1: Prepare Your Vegetables. Begin by thoroughly washing and trimming both ends off all your zucchini and yellow squash. Next, cut each squash in half crosswise, creating two shorter pieces. Then, carefully slice each half lengthwise into uniform 1/2-inch thick planks. This consistent thickness is key for even cooking and ensuring they don’t fall apart on the grill.

Step 2: Marinate for Maximum Flavor. In a large mixing bowl, combine the sliced zucchini and squash with the basil pesto, olive oil, fresh lemon zest and juice, kosher salt, and granulated garlic. Toss everything gently but thoroughly to ensure every piece of squash is evenly coated. Set the bowl aside at room temperature to allow the vegetables to marinate for at least 15-20 minutes. While they are marinating, preheat your gas grill to a medium-high heat (around 400-450°F or 200-230°C).

Step 3: Grill to Perfection and Garnish. Once your grill is preheated, carefully arrange the marinated squash slices directly on the grill grates. For optimal grill marks and to prevent them from slipping through, place the slices perpendicular to the grates. Grill for 2-4 minutes per side, or until the squash is tender-crisp and exhibits beautiful char marks. The exact time will depend on your grill’s heat and your desired tenderness. Once cooked, transfer the grilled squash to a serving platter. Finish by generously scattering the chopped pistachios and crumbled feta cheese over the top, and add a final flourish of freshly cracked black pepper. Serve immediately and enjoy!

Expert Grilling Tips for Unforgettable Results

Elevate your grilled zucchini and yellow squash from good to absolutely amazing with these pro tips:

  • Slice Uniformly: Consistency is crucial for even cooking. Aim for slices that are approximately 1/2 inch thick. This ensures that every piece cooks at the same rate and prevents some from becoming overcooked and soggy while others are still firm. Slicing lengthwise into planks is often easier to manage on the grill than rounds or spears, which can more easily fall through the grates.
  • Preheat Your Grill Thoroughly: Always allow your grill to reach its target temperature (medium-high, 400-450°F) before placing the vegetables on it. A properly preheated grill creates a sear, resulting in those coveted, attractive grill marks and a slight char that adds tremendous flavor.
  • Don’t Rush the Marinating: While 15-20 minutes is a minimum, allowing the vegetables to marinate for up to 30 minutes at room temperature (or even an hour in the refrigerator) will deepen the flavors significantly. The acid from the lemon also helps to slightly tenderize the squash.
  • Monitor the Heat Closely: Grilling vegetables can be quick, so stay attentive! If you notice the squash charring too quickly, don’t hesitate to move it to a cooler part of the grill or slightly reduce the heat. Overcooked zucchini or squash will become watery and soggy, losing its delightful texture. The goal is tender-crisp, not limp.
  • Clean and Oil Your Grill Grates: Before grilling, ensure your grates are clean to prevent sticking. Once hot, lightly oil them with a paper towel dipped in high-smoke-point oil (like avocado or canola oil) using tongs. This helps create beautiful grill marks and ensures the squash releases easily.
  • Serve Immediately: Grilled zucchini and squash are best enjoyed fresh off the grill when they are warm and tender-crisp. The flavors are most vibrant at this point.
  • The Feta & Pistachios Are Non-Negotiable: Seriously, don’t skip these! The creamy, tangy feta and the salty, crunchy pistachios aren’t just garnishes; they are integral components that provide contrasting textures and complementary flavors, elevating the entire dish.
  • Consider a Grill Basket: If you’re nervous about slices falling through the grates, or if you prefer smaller pieces, a grill basket can be a fantastic tool for grilling vegetables.

Exciting Additions & Flavor Variations

This grilled zucchini and yellow squash recipe is wonderfully adaptable. Feel free to experiment with these ideas to suit your taste or what you have on hand:

  • Pesto Play: While basil pesto is classic, don’t limit yourself! Try a sun-dried tomato pesto for a richer, sweeter flavor, or a vibrant cilantro-lime pesto for a more herbaceous and zesty twist. A spinach or arugula pesto could also add interesting dimensions.
  • Cheese Swaps: If feta isn’t your favorite or you’re looking for an alternative, creamy goat cheese offers a delightful tang and softness. Freshly grated Parmesan cheese can add a sharper, saltier kick, while a sprinkle of crumbled cotija provides a salty, crumbly texture.
  • Nutty Alternatives: Pistachios offer a unique flavor and crunch, but chopped toasted almonds, pine nuts, or even walnuts can be excellent substitutes. The key is to ensure they are roasted and lightly salted to maximize their flavor and crunch. A quick toast in a dry pan enhances their nuttiness.
  • A Touch of Sweetness: For a more complex flavor profile, finish the dish with a delicate drizzle of balsamic glaze, which adds a sweet and tangy reduction, or a touch of honey for a subtle, natural sweetness that complements the grilled vegetables beautifully.
  • Spice It Up: For those who love a bit of heat, a pinch of red pepper flakes added to the marinade or sprinkled over the top will provide a gentle warmth without overpowering the fresh flavors.
  • Fresh Herbs: Beyond the pesto, a sprinkle of fresh chopped parsley, mint, or dill just before serving can add an extra layer of freshness and aromatic complexity.
  • Make it a Meal: Transform this side dish into a more substantial meal by tossing the grilled squash with cooked pasta, a protein like grilled chicken or shrimp, and extra pesto. It makes for a fantastic summer pasta salad!
