- Add the sliced onions and minced garlic to the pot. Sauté for 2-3 minutes until the onions soften. Stir in the cumin, salt, oregano, paprika, pepper, and chili powder. Cook for another 1-2 minutes until fragrant, stirring constantly.
- Pour in the beef broth. Use a wooden spoon or spatula to scrape the bottom of the pot thoroughly, dislodging any browned bits from the searing process. This deglazing step adds significant flavor and prevents sticking.
- Return the browned beef to the pot. Add the apple cider vinegar, honey, Worcestershire sauce, chopped chipotle peppers (with all their adobo sauce), canned green chiles, and fresh lime juice. Stir gently to combine all ingredients.
- Secure the lid on your Instant Pot and set the sealing valve to the “Sealing” position. Select “Pressure Cook” (or “Manual”) on “High Pressure” and set the timer for 70 minutes. Once the cooking cycle is complete, perform an immediate quick release by carefully moving the sealing valve to the “Venting” position.
- Once the pressure has fully released and the float valve has dropped, open the lid. Carefully remove the tender beef and onions from the pot to a cutting board or large bowl. Use two forks to shred the beef into desired strands. Ladle a generous amount of the flavorful cooking drippings over the shredded beef to keep it moist and infuse it with extra flavor. Add more drippings as needed during serving.

- Chuck Roast: This is the ideal cut for tender, shredded beef. It may also be labeled as a round roast, bottom roast, or stew meat. Cutting it into 3 equal pieces before cooking ensures even tenderness.
- Kosher Salt: All my recipes are developed and tested using Morton kosher salt unless otherwise specified. Its flake size and balanced flavor make it excellent for everyday cooking. If you are using table salt, please reduce the amount by about one-third, as it is finer and saltier by volume. I highly recommend trying kosher salt for its superior taste and ease of use.
- Chipotle Peppers: These usually come in a 7-ounce can. For this recipe, remove and roughly chop 1-2 peppers. Reserve all the adobo sauce from the can to add to the recipe, as it’s full of smoky flavor. You can store any remaining peppers in the refrigerator in an airtight container for future use. Adjust the number of peppers based on your preferred spice level.
